The tigernut: A superfood with incredible properties
Cyperus esculentus
One of the earliest recorded farmed plants, there is evidence of its use in 6,000 years old tombs in Ancient Egypt. It was introduced into Spain by the Moors when they arrived there c. 700 A.D.
Farming:
Tigernuts require sandy soils with Mediterranean climate, reminiscent of that of the Spanish region of Valencia, where the tigernuts find themselves at home. They are mechanically harvested, with an especially designed machine. Once harvested, they are washed and slowly dried in chambers built to that end over a period of three months, after which, the tigernuts are packed in henequen sacks to maintain them fresh and ventilated, resulting in a product of the highest quality for whatever purpose our customers require.
Properties
• It reduces the risk of cardiac and circulatory diseases due to its high content of Omega 6 (linoleic acid), and Omega 9 (oleic acid). Its properties are very similar to those of olive oil.
• It favors digestion, due to its high fiber content.
• High contents of potassium and magnesium.
• High contents of Vitamins C and E, which prevent the formation of free radicals in the organism.
• Source of vegetal proteins.
• Gluten free.
• Lactose free.
• Nuts free.
• Vegetarian, vegan, paleo, and kosher diet friendly.
